The Frugal Game Course

  • Duration: 4 hours
  • Maximum 10 persons
  • Cost: £120 per person

This is a great course for anyone who is looking to make the most of game. You will get to work on a brace of pheasant and partridge, a muntjack deer, rabbits and more.

You will be welcomed with drinks and some meaty treats on arrival before watching the Artisan Butcher demonstrate his skills, butchering a whole deer. During the demo you will learn about the history of game and all its many uses from steak to casserole. Each cut will be described in detail with its many uses, as well as tips and hints on how to cook them.

Along the way you will be taught how to use the tools of the trade and the correct way in which to sharpen them. Then it’s over to you! You will now get to grips on your own game, plucking and breaking it down into what’s good for you; slice, dice or marinade it, what ever you would like.

The course will finish with a fantastic feast of meaty delights and a few glasses of wine or soft drink for the drivers and a chance to chat to the Artisan Butcher and your fellow course mates.

Rabbit Renaissance

  • Duration: 3 hours
  • Maximum 10 persons
  • Cost: £50 per person

Bring back the rabbit! Have you ever tried rabbit? You don’t know what you’re missing. In this course we will look at the many uses of the much revered rabbit. You will get to work on 4 rabbits of your own learning how to gut, skin and prepare this most versatile of meats.

During the course we will look at different cooking methods including Rillette de Lapin, rabbit terrines, stews, potted rabbit, casseroles and rabbit wellington. You will take home all the different products that you make and all herbs and spices will be provided.

An informal lunch will be provided at the end of the course with refreshments. This will give you a chance to chat with the Artisan Butcher and your fellow classmates.

Venison – The Royal Beast

  • Duration: 6 hours
  • Maximum 10 persons
  • Cost: £220

This course will look at the most royal of beasts: the deer. You will each get a whole carcass to work on which you will take home with you to stock your freezer. All venison carcasses will be hung for up to 14 days.

The Artisan Butcher, through a series of demonstrations, will show you how to skin and butcher your venison and the many uses of this healthy economical meat, from the haunch to the loin, BBQ to casseroles. You will also get the chance to make your own fantastic sausages. All herbs and spices will be provided.

This is a very hand’s on course and protective clothing will be provided, so roll up your sleeves and get stuck in! An informal lunch of meaty treats will be provided along with refreshments throughout the day.

This is an ideal course for the enthusiastic home cook looking to up skill, chefs looking to gain hands on experience, or stalkers and game keepers looking to add value to their carcasses.
