The Artisan Butcher, aka Jamie Willows, discovered his passion for butchery at the tender age of 13. Learning his trade in High Street butchers he developed a passion for the subject but harboured an interest for reviving more traditional techniques. Further moves in Jamie’s career, including working as Head Butcher at Jimmy’s Farm, fuelled his passion for working with native, rare and traditional breeds and inspired him to develop the artisan skills of curing, smoking and charcuterie.

Jamie’s career has seen him in many an interesting job role, including featuring on TV and being invited to demonstrate his skills at many regional and national shows and events. Jamie is also passionate about working with the unemployed or those seeking a change in career. Through his partnership with leading training and careers advice provider, GNMA Ltd, Jamie leads a number of training courses including all of which are held at the GNMA training facility located in Ipswich town centre.

Jamie is also passionate about working with a number of small producers, either creating new products in partnership or helping to shine the spotlight on their produce. Jamie also supplies a number of restaurants, shops and delis with his produce and those of his hand-picked small producers, as well as supplying to the individual consumer at home.
